Magali Pardo is 20, a widow, and runs an eatery in the city of Loja employing one assistant. She married when young and has two daughters. Her husband was a driver but died because of a heart problem. Magali helped her mother when she was young, together with her sisters, running a burger bar. However, she supports herself and her children now running the restaurant having received help from her mother-in-law. Magali requested a loan in order to make some physical improvements to her premises, particularly the kitchen where she cooks and prepares food. The municipality has become stricter regarding food hygiene and she is keen to ensure she does not fall foul of the law. Magali serves breakfasts, lunches and dinner and this includes traditional food such as 'tamales', 'humitas' and tortillas. She also wants to start an additional business, taking on another employee, selling plates, cutlery, pots and pans and aspires to opening a 'picanteria' in the future selling cooked meat for snacks.
